At the beginning of the year, we held a giveaway during our Shop Local campaign called “Share the Local Love” where we asked you to nominate a local business that you wanted to see win a marketing package from Tourism Langley. One of the establishments you picked was Salt & Thyme, located in Willowbrook on 62nd Avenue. Here’s some of what we already knew about this unique spot; they’re all about providing a fantastic private dining experience in a warm and welcoming space with a heavy focus on using local ingredients whenever they can. For their marketing package prize, we visited Chef Adrian and his wife Shannon to learn more about Salt & Thyme and capture some images of their beautiful lunchroom. We hope you enjoy!
Tourism Langley: Can you tell us a bit about how your business started, and when it opened?
Salt & Thyme: Adrian becoming a chef was not the expected outcome, but after trying to impress a girl with his cooking skills, it all began and soon his research went from being an inspiration to an obsession.
After working in restaurants for ten years, Adrian took the leap and opened his own restaurant, The Seasonal Experience, in downtown Langley. It was cute, but too small so in 2009 we expanded into a bigger space to accommodate the growing business; thus Seasonal 56. In April of 2016 Seasonal 56 was closed so we could take a step back and re-balance, but a new chapter began a few years later with the opening of The Chef’s Shack at The Fraser Valley Cidery and The Canned ham Canteen Food Truck.
A new location; the lunchroom was acquired in September of 2020. Not to be mistaken for a “restaurant’, this new space was the perfect location for a kitchen in which Adrian could create; and a private dining room that allows us to sparkle, but it will always be available for private bookings only. We look forward to continuing to share our passion for all that is local with you!
TL: What kind of experience do you offer?
S&T: We offer a unique private dining experience, an elevated food truck, wholesale to small farms and pre-packaged food to patios.
TL: What is your greatest success as a business?
S&T: Our greatest success has been navigating, surviving and growing throughout a pandemic.
TL: Can you tell us about what is most important to your company?
S&T: Having strong relationships with our partners and customers is very important to us
TL: Is there another business in the Township of Langley that inspires you?
S&T: There are so many! We are excited to work with many small businesses across the township that all offer unique experiences.
TL: What is your favourite thing about owning a business in the Township of Langley?
S&T: We love the incredible diversity of businesses around us.
TL: Do you have any “must try” items or experiences?
S&T: We specialize in “experiences” so booking a private dining experience in the lunchroom with us would be our top recommendation!
TL: Do you source any local items? If so, where are they from?
S&T: The majority of our products are locally sourced from across the Fraser Valley, the Interior or British Columbia.
TL: What would you recommend to a visitor if they were looking for other sources of entertainment, shopping, or experiences in the Township?
S&T: We recommend touring the entire Township of Langley! Do not limit yourself to one local experience.
